So last week friday i posted a recipe and will most likely do one
again today. I figure since we've all had different experiences(read
drama as well) throughout the week, looking forward to a peaceful
weekend is all we want and honestly most of us are never really that
productive on a Friday afternoon! Working while listening to good music
makes my Fridays very bearable, and I thank God that am able to listen
to music at work, many people don't have that priviledge.
Today I
would like to make a very nice dish for my husband as we relax the
evening away to the sound of light (heavy rain wud be great, but with no
harm to anyone out there) rain, I hope. It's really been pouring here,
for the last one month to the joy and lose of many. The thing about our
government is lack of proper planning due to many reasons that I don't
really feel like spoiling my Friday thinking or talking about.

Popcorn Chicken
A version of popcorn chicken using breadcrumbs as a coating
First, marinate 250gm bite-sized boneless chicken cubes for half an hour in:
half tsp salt
half tsp red chilli powder
half tsp black pepper powder
half tsp paprika powder
pinch of tandoori masala
pinch of cumin powder
1 tsp lemon juice
1 tsp oil
quarter tsp garlic paste
When ready to fry, have the following ingredients ready:
quarter cup of self rising flour
three-quarters of a cup of breadcrumbs mixed with quarter tsp salt and pinch of pepper
1 egg, beaten well with 1 tsp water
One cube at a time, roll the chicken in the flour, then dip them in the
egg, then roll them in the breadcrumbs with a gentle hand. This
normally can get messy but once you get going, it doesn't take long.
Finish dipping and rolling all the pieces and set them on a tray or
plate.
Heat oil in a pan, then deep fry them in batches at
medium heat until golden and crispy. Do not over-fry as boneless chicken
hardens if over-cooked.
Drain on tissues/kitchen towels. Serve with fries and a dip!! :)

if you still have to work, I hope it shall be a laid back day for you.
